How to Make
Peel and quarter the onion,peel the garlic and cut up the bell pepper, tomato, carrot into large pieces.
To make this very quickly without compromising on any flavor, blitz each vegetable separately in a food processor until they are roughly chopped.
In a large pot, add the olive oil and begin cooking the onion, then gradually add the garlic, carrot, bell pepper and cook.
Then add the minced beef and continue cooking until it browns.
Add the chopped tomatoes, then the canned tomatoes, then the tomato paste and finally the cup of water.
Season with the salt, pepper, oregano, thyme, vinegar, brown sugar and chili (if using)
Being to a boil and then simmer for 20 minutes.
In the meantime cook your pasta with salt (no oil hete). Do not overcook, make sure they still have a little crisp to them.
When your pasta is cooked, add it to the sauce, and up to 1 cup of the strachy pasta water.
Mix well and serve with the fresh basil leaves and shredded parmesan cheese.
